Lentils with rice, a traditional Levantine vegetarian dish, are best paired with crisp salads. The ingredients for the dish include cooked rice and lentils that have been enhanced with copious amounts of onions that have been sautéed in olive oil. The dish is typically accompanied by flatbread rather than utensils, plain or garlic-flavored yogurt (which makes the dish no longer vegan-friendly), and fried onions when served.
In addition to using bulgur instead of rice, several variants of the dish can also be easily customized using different spices and fresh herbs.
