Briouats are little, crispy pastries from Morocco that can be filled with a number of things, including cheese, chicken, lamb, or lemon. The pastry is either fried or baked, and other herbs and spices are frequently added on top.
It is often served as an appetizer after being folded into cylinder or triangle forms. Briouats are particularly well-liked during Ramadan.
