Moqueca is a seafood stew made with fish or shrimp and a base of palm oil, coconut milk, or olive oil (or both). The dish is typically served with rice and is simmered in old-fashioned clay pots with fresh herbs and veggies.
Because the Portuguese introduced coconuts to the nation and slaves from Africa introduced palm oil, it can be traced back to 300 years ago, when it was first invented. There are various varieties of moqueca, including moqueca Capixaba and moqueca Baiana from the northeastern state of Bahia.
The dish is typically topped with freshly chopped cilantro, and the perfect side dish is crusty bread.
